UMAMI 100 is a unique sake liqueur. Handcrafted from an umami-rich naturally fermented 100% koji sake, blended with bold burnt caramel.
Can be enjoyed neat, over ice or added to enhance your favourite concoction. Designed specifically to impart rare savoury complexity to cocktails.
UMAMI 100 as the name suggests possesses tons of umami, this is formed from the abundance of amino acids from our 100% koji brewing process. Typically on average a sake is made up from 20% koji rice and 80% non-koji rice.
Think of the koji rice as the engine, and the non-koji rice as the fuel. The enzymes from the koji rice breakdown the compounds in the remainder of the rice to provide simple sugars from the starch and amino acids from the enzymes. By ramping up the koji element 5x we have super boosted the enzymatic process, resulting in an abundance of these simple building blocks and in turn a high amplitude of flavour and aroma compounds.
UMAMI 100 shares some characteristics of a deep dark nutty sweet soy, but without the salt. Think of what this can do for your manhattan, americano or boulevardier.
Coming in at 20% abv purely from rice fermentation, blended with burnt caramel and a ton of naturally occurring amino acidity. Super delicious, inviting and complex!
