This limited-edition British Shōchū is a traditionally-made Japanese sipping spirit, made using a blend of sake Kasu, repurposed from various productions of KANPAI’s sake brewing across the 2020/21 brewing season.

Deep, savoury and umami with notes of meaty mushroom, brown rice and nutty richness; this distinctive Shōchū can be enjoyed on its own, paired with food or used as an experimental addition to cocktails.

Tasting notes

NOSE - Woodland mushroom, oak, umami

PALATE - Broth, brown rice, light soy, shiitake mushroom

FINISH - Long, rich and dark, walnut oil

How to drink

Traditionally, Shōchū is enjoyed with food and would pair well with earthy mushroom and cooked rice dishes.

It can be enjoyed neat at room temperature, but this KASU 2021 is best diluted 50/50 with warm water.

Shōchū is also a popular ingredient in cocktails.
