A rich, full-bodied, junmai ginjo sake; brewed using the ancient Bodaimoto method. Notes of banana bread, persimmon and honey.  

MIRU meaning “SEE” is a limited edition, ultra-premium, experimental British sake within our REBIRTH series.

Using the very latest henpei flat polishing technology, alongside the mizu-moto method derived from a 1,000-year-old Bodaimoto recipe (natural lactic acid is developed using koji and water prior to fermentation) this sake aims to explore the structural depth, acidity, and microbial complexity achievable through premodern techniques.

There are two variations CLEAR / CLOUDY - and can be purchased as a pair (whilst stocks last):

  • MIRU CLEAR is a fine physically filtered elegant expression, with zero use of charcoal or finings. 

  • MIRU CLOUDY is an usu-nigori, containing a very small amount of rice sediment for additional texture. Gently mix the bottle and pour the sake hazy.  

We recommend to enjoy each style lightly chilled or at room temp.
